A very nice but quite complicated and time-consuming cold dish.
Ingredients:
豆腐 Tofu 1 box
人参Carrot just for color
こんにゃくKonnyaku similar to carrot
ほうれん草Spinich・春菊Shungiku a bunch or half
Method:
1. Dry Tofu with paper towel to squeeze out the water after a while
2. Cut Konnyaku and carrot to small pieces 5mm*1cm, boil small amount of water, add a bit of だし dashi, soy sauce, salt, sake, and mirin, add Konnyaku and carrot, cook under small flame until flavored.
3. Wash and cut off bottom of green vege, if the string is too thick, cross cut the bottom to four so it’s easy to boil, boil in salted water briefly 30 seconds since they get cooked easily, and we don’t like soft soggy vege here, straight to cold water, and squeeze out water before cut to small pieces, or cut first before squeeze
4. Press Tofu through a sift, add flavored Konnyaku, carrot, cutted vegetables, add sugar, salt and 焼きいりごまbaked/mashed sesame
Darling’s love pickles, make ourself at home – Chinese Cabbage.
Half Chinese Cabbage
6 spoon salt (5 spoons before, not tasty enough)
1 chilli
some yuzu powder
press for whole day with heavy stuff, then put into small bags and leave in fridge to serve.
Croissant ($3.4)(should be $4 already)
Medium size, lots of layers, crispy and medium dry inside, not buttery, very light.
Almond Croissant ($4)
Nice nice and nice.
Not always big and solid all the time, second time was a bit burt and smaller =(
Danish ($3.8)($4 on 2012.12.23)
Darling like it okay, not too sweet, not too much cinnamon. But base is a bit heavy for honey =).
First time we had apple, second time had pear but didn’t realize it =P. third time had both …
Canele ($3.5)
Nice as what it is described.
Banana Fig Coconut Tea Cake ($4.8)
Many figs and lots of coconut, light sweet. But feel like fruit bread worth more to have, and cheaper (big loaf for only $7, cake is $4.8 for slice)
French Baguette ($4.5)
Maybe the best in Melbourne we have found so far. Quite slim compare with others, but smell nice, hard outside and chewy inside. But Darling said it might be nicer if they use a different kind of flour (but i’m not flour expert)

Fruit Bread ($7)
First Impression – very heavy! medium block size might goes for 1kg. It’s multi-grain,poppy seeds with some spice and lots of big big dried fruits, very full and healthy. Might go for another one but Darling doesn’t like raisins =(
Casalinga ($5.7?)
Bigger baguette, hard outside, chewy inside, might be too tasty of yeast if leave it for long
Campania ($5.7)
Light wholemeal bread..
2 pieces of seaweed, soak in big bowl of water for whole day.Heat up at night, take seaweed for sanshyo kobu. Add two bags of silver dash, cut one piece of fried tofu, half then pieces. Put in the boiling pot, add soy sauce, milin, sake. Leave overnight for flavor.
Cut spring onion and add shijimi chillinpowder for udon. May have shrimp tempura as fancy udon!
This is on my wish list, after I finish my sugar-free-two-weeks!
Chocolate Ingredients (serves 4)
300ml thickened cream
1/4 cup Cointreau liqueur
300g dark chocolate, finely chopped
Method
Heat cream in a saucepan over medium heat until almost boiling. Stir in Cointreau.
Place chocolate in a heatproof bowl. Pour hot cream mixture over chocolate. Stir with a metal spoon until melted and smooth. Pour into a warm bowl or small ceramic fondue.
Serve chocolate fondue with fruit and marshmallows.

Seat: New aircraft with smaller seats in StarClass, so they can fit more customers. E.g. first roll middle seats was two, not fit three, seats narrower.
Dessert: Before was normal round cheesecake cut into triangle slices, now is very small cubes, said they are cutting cost. Point is, the passion fruit cheese cake taste like sponge, not cheesy as before, and they are not allow to give both cake and cheese selections..due to cost. On the flight from Singapore to Beijing, nobody come to serve snacks.
StarClass: Melbourne to Singapore was quite crowded, but Singapore to Beijing had only three passengers in StarClass, very quiet, on the other hand, Economy Class was very busy.
First time fly from Osaka to Cairns with Jetstar, not very good.
Less than seven hours flight.
Meal: Beef Stew with Udon Noodles, with mushroom and broccoli.
Salad: cucumber, tomato and red onion with vinegar and olive oil. But food is too oily.
Dessert: banana cake and fruits.
Normally we have cheesecake and cheese and crackers on both way between Gold Coast to Osaka. and Snacks, chips, chocolates…Miso soup…but not from Osaka to Cairns, only Cairns to Osaka. Disappointed. They didn
